Good Friday has arrived! And I am making hot cross buns of course. I hope you all have a lovely holiday weekend celebrating!
Hot Cross Bun Ingredients
100ml boiling water
1 T (15g) Yeast
3 1/2 cups (450g) white flour
2 T (30g) brown sugar
1t (5g) salt
1 T butter
1 cup dried fruit – currants, mixed fruit & peel
1-2 T mixed spice
Dissolve yeast by combining with milk and boiling water. Mix dry ingredients together, rub in butter and then add fruit. Pour in yeast liquid mixture and knead for 10 minutes.
Place mixture into a greased bowl then turn the dough over once to grease top side. Cover and set mixture aside to rest for 15 minutes.
Cut and shape mixture into buns by pulling cut edges under. Set buns on tray allowing room for rising. Place in a warm place for 1 hour.
Batter Mixture for crosses
2 T cornflour
2 T white flour
1/4 t baking powder
pinch of salt
2 T milk
Mix together and pour into piping bag, pipe horizontal and vertical lines across buns to create the crosses.
Cook at 220℃ for 5 minutes, then reduce to 180℃ for a further 10 minutes.
Once buns are out of the oven, glaze with 1 T sugar dissolved in 1 T hot water.
Allow to cool slightly and serve warm.
